The heritage of Summum began 50 years ago, known formerly as Parrilla. However after a profound renovation it has become the leading gastronomic reference within the island of Gran Canaria. It has been awarded many awards including a Sol Repsol.

The Chef: Xabier Blanco is a young Navarran chef who graduated from the Basque Culinary Center of the University of Mondragón. Whilst at university as a student he began his training periods at the Alhambra restaurant in Pamplona (Dos soles Repsol), at Alkimia, in Barcelona. Also with a Michelin star and at the “Ituarte Group” in Mexico City.
